Last night, i had follow your recipe to make the Mangoe Cheesecake which you had posted sometime ago. My sponge has shrink from the side after cooling, secondly, the frosting of the cream is very messy and the topping is messy as well. therefore, this morning when i saw your mango passionfruit cheesecake, was having an idea to make the centre filling to the top instead. Will try it out again.
Looks very good and to die for! Yes, I love mangoes especially our Philipines carabao variety. they are the best.

The centre filling is it made of mango puree (strained) and mix with agar agar powder or gelatin?

ReplyDeleteNormally when a sponge cake is taken out from the tin, they will shrink slightly unless it's the traditional type, they will not shrink.
