Light Orange Cupcakes
Ingredients:
8 egg yolks
2 egg white
80 gm. sugar
80 gm. cake flour
20 gm. milk powder
65 gm. melted butter
1 Tbps. Cordial orange flavour (Sunquick)
Method:
(1) Whisk egg yolks, egg white and sugar till thick and fluffy.
(2) Fold in flour and milk powder.
(3) Fold in butter and orange cordial.
(4) Scoop into muffin or papercups and bake at 175C for about 15 - 20 mins.
Note: As this recipe has a high content of egg yolks, the top will turn brown faster. Bake at the lower shelf of your oven.

Thank you so much for sharing the recipe, Aunty Yochana. I can't wait to try it!
thanks for sharing your recipe! The much higher proportion of egg yolk to egg white is interesting, must try this out myself.
Thank you thank you for sharing and publishing your recipe. It will be my roadmap to successful baking. Now, I wonder no more why they are so yellow. They are mostly made of eggyolks. Thanks again.
Hi Aunty,
Is it truly 8 egg yolk or typo error? thks

Do you use top and bottom heat or only bottom heat?
I noticed that it has no baking powder. How will it rise?
