Light Orange Cupcakes






Ingredients:

8 egg yolks
2 egg white
80 gm. sugar
80 gm. cake flour
20 gm. milk powder
65 gm. melted butter
1 Tbps. Cordial orange flavour (Sunquick)

Method:

(1) Whisk egg yolks, egg white and sugar till thick and fluffy.
(2) Fold in flour and milk powder.
(3) Fold in butter and orange cordial.
(4) Scoop into muffin or papercups and bake at 175C for about 15 - 20 mins.
Note: As this recipe has a high content of egg yolks, the top will turn brown faster. Bake at the lower shelf of your oven.
