Lotus Paste Buns

    Still cannot get my bread right. when rolling the dought after proofing we use flour on the table top & our hand or use oil? I saw a baker use oil on the table top & hand. Pls advise

    I don't use oil, I use flour to dust the table.

    Thanks for the reply. How do you get the nice colour on your buns? Brush with egg & butter or just beaten egg before putting into oven to bake?

    yes we cook the lotus paste ourself.
