Chocolate Chip Muffins






Ingredients:
Combine the following together:
(A)
250 gm. flour
2 tsp. baking powder
1/2 tsp. bicarbonate of soda
280 gm. castor sugar
1/4 tsp. salt
25 gm. cocoa powder
100 gm. chocolate chips

250 ml. fresh milk
1 egg
1 tsp. vanilla essence
90 gm. cornoil

Some extra chocolate chops for sprinkling

Method:

(1) Combine the flour, sugar, baking powder, soda , chocolate chips, salt and cocoa powder into a mixing bowl.
(2) Pour in the wet ingredients: fresh milk, egg , oil and vanilla essence.
(3) Mix till just combined.
(4) Spoon into muffin cups, sprinkle some chocolate chips on top and bake at 180C for about 20 to 25 mins.

aunty yochana, I noticed your recipe has no sugar in the list of ingredients .... is it supposed to be sugar free?

i tried your recipe and it don't tuened out to bel ike muffin.
It taste abit like ``kuehh' instead?
Why? Do you know here went wrong?

Hi Angie

Did you put in the sugar??
I think you stir too much till it becomes like kueh.
for muffins, the stirring technic is very important. Just stir till "Just combined" will do.

yes you can use melted butter and cake flour.
