Sambal Glutinous Rice Layer Kuih






Blue Clitoria Flower (Bunga Telang) glutinous layer ingredients:

250 gm. glutinous rice flour - soak overnight
2 Tbsp. Blue Clitoria flower juice
100 ml. thick coconut milk
1 tsp. salt

Turmeric Glutinous Rice layer ingredients:

250 gm. glutinous rice flour
2 slices dried tamarind
1/2 Tbsp. turmeric powder
500 ml. water
100 ml. thick coconut milk
1/2 tsp. salt

Sambal ingredients:

60 gm. dried shrimps
3 red chillies
4 shallots
3 cloves of garlic
1 tsp. salt
2 tsp. sugar

Method:

(1) Soak glutinous rice overnight for the blue clitoria layer.
(2) For tumeric glutinous rice, soak glutinous rick with tamarind slices, turmeric powder and water overnight.
(3) For sambal , blend all the ingredients until fine. Heat up oil in the hot wok, fry the sambal mixture until dry and fragrant. Dish out and leave it to cool slightly.
(4) Drain the soaked plain glutinous rice and steam it over high heat till cooked. Remove from steamer, mix with coconut milk and salt while still hot. Place cooked rice in a greased 8" square tin lined with a banana leaf. Press tightly to make it compact. Sprinkle blue clitoria juice on top and steam for 5 mins.
(5) Drain the soaked turmeric glutinous rice, remove tamarind slices and steam over high heat until cooked. Add in coconut milk and mix well. Stir in fried sambal then place it on top of the cooked blue layer and press it tightly to make it compact.
(6) Steam over medium heat for another 15 to 20 mins.
(7) Leave it to cool completely before slicing. Serve.

blue is due to the flower called "Bunga Telang" or Clitoria. Boil it for a few mins and squeeze the juice and if it's fresh, pound it and then squeeze it.
