Aunty Yochana,

You make me drool over these. Also reminded me that I have not eaten them for a long time now.

Hope you have had an enjoyable Lunar New Year.

is this the 65C Tangzhong choc wassant aunty? Looking so good!
are there any tips why my dough so sticky, took so long to prove aunty, and the end result is a hard bread instead of fluffy ones just like yours aunty? million thanks!

Hi Yoo Lee

This is the 65C Tangzhong choc wassant which u told me last night.

Your dough is sticky because you did not beat long enough to get a smooth and non-sticky dough. Just continue beating...

hi Yoo Lee

You can do the window test. Just pinch a small dough and try to stretch and if it can stretch and does not break then it's ready.

Aunty, these look so delicious!!! My brother saw these on the monitor and asked if I'm learning how to make them. Eh....wait till I have overcome my fear of baking one's own bread :P Am really hopeless with anything made with yeast.

hi grazztim,

you cook the tangzhong yourself:

250 gm. water with 50 gm. bread flour. Stir and cook into a paste.
