hi aunty yochana,

i would like to ask how do u store excess cookie dough? is it better to refrigerate or freeze it in the freezer? how long can they be stored? after storage, do u just leave it until it reaches room temperature before baking again? sry for so many questions!

hi janelle,

both are acceptable. Freezer can last longer. In the fridge, not too long..they will turn mouldy.

Hi Aunty,

Normally do you bake your lapis for another 10 to 15mins after you finish grilling all the layers? I notice that some recipes suggest to bake and some not. I am quite confused. Pls enlighten me!!

yes I do bake for another 15 mins. just to make sure that it's cooked.

Hi Aunty,
I would like to ask how do you cut out so nice and even strips for the colour layers. Do you use the "L shaped aluminium mould " like they mention in some recipe books.Do you know where can I get the "L shaped aluminium mould " ? I hope I can bake one like your. Dream......

Hi Mummy Ted,

Yes I used the angle iron to do the cutting. These were given to me by the author of the book "Simple Kek Lapis". You can buy in sets in Sarawak.

You actually can get it from the furniture or hardware shop. My office has lots of these angle iron last time but they were really long. You have to saw it shorter.

Thank for your reply. Btw do you normally finish baking the whole cake in one day or you will bake the colour layers in 1 day advance and finish the base and top on the next day? Have you try putting the remaining batter in the fridge and use it the next day? Wonder whether it will affect the taste and result? Sorry for the loh soh, cos I have a little playful toddler with me , so I have very little time to do my baking . Try to bake before he wakes up or after he sleeps. Ha...

I normally finish it in one day...takes a total of 5 hours to finish.
