Cocoa Banana Muffins





Ingredients:

(recipe yields 16 standard muffins)

200 gm. cake flour
50 gm. cocoa powder
1 tsp. bicarbonate of soda
1/2 tsp. salt
3 mdium bananas - mashed
125 gm. sour cream
180 gm. unsalted butter
160 gm. sugar
40 gm. light brown sugar
3 eggs

Method:

(1) Sift cake flour, cocoa powder, bicarbonate of soda and salt together.
(2) Cream butter and sugar & light brown sugar till creamy.
(3) Add in eggs into the creaming butter one by one , mixing well before the next addition. Add in mashed bananas.
(4) Add in flour and sour cream and mix till just combined.
(5) Spoon into muffin pan lined with paper cups.
(6) Bake the muffins at 175C for about 25 mins. until they are well risen and feel firm to the touch.
(7) Cool muffins on a cooling rack.

muffin's texture usually a bit 'berat' compared to cupcakes, isn't? but ur muffin's texture looks like cupcake's. spongy (hoooo am drooling).or what does it supposed to be or look like?
correct me if i'm wrong :)

This looks more like cupcakes than muffins.

From what I know, muffins are not cakes and the texture should be more dense and chewy. Infact, those muffins that I have had during my overseas trips are something like a cross between organic bread and cake and are mighty filling. Great to chew on!

one question, any difference between cake flour and low gluten flour? I can't find cake flour in perth :(

Thanks for the recipe. I notice no baking powder is used in this recipe, I am just wondering the batter can actually rise w/o baking powder.

Yes it will rise because you have the bicarbonate of soda and the eggs.

May I know what will be difference if baking powder is added? coz most muffin recipe I seen have both baking powder and baking soda.

Also, may I know can I replace sour cream with plain yogurt? Will there be any difference in the result?

You noticed that this muffin is not the dense type but you can always try...Yes you can replace sour cream with yoghurt.

Recently i just bake this cocoa banan muffins. But somehow, my muffins seems to sag down after it cool and when i eat i can't taste the banana. What's going wrong? Please advice. Thanks

Hi Winnie

You overstirred the mixture.
For banana cakes, you won't taste the bananas very strongly cos too much bananas will make the cake heavy and the texture will turn dense. Add in some banana essence if your like.
