Steamed Milk Cake
Makes about 7 cupcakes.
Ingredients:
170 gm. Fresh Milk
75 gm. sugar
100 gm. cake flour
20 gm. rice flour
2 tsp. double-action baking powder
Method:
(1) Use a hand whisk to whisk fresh milk with sugar until the sugar has dissolved.
(2) Add in remaining ingredients and stir well.
(3) Spoon int small cups lined with paper cups.
(4) Steam at high heat for 15 mins. or until cooked.
(5) Remove and cool on wire rack.

For steaming, better to use double action baking powder. It's leavening gases ar released once in contact with moisture and another time during steaming.

Just omit the rice flour, I don't know what to replace and taste is subjective. After all the ingredients is very small and cheap, no harm trying it out.

I've explained to proflower about the doube-action baking powder.
Single baking powder is just one time action (leavening gases) - during mixing with moisture.

mm....huat kueh...burst into flower? I also don't know why. This is the first time I made this too. It's not supposed to burst. I just stir all the ingredients together.

i've just steamed the milk cake... the recipe yield 8 huat kuey!!! all luffing at me! hahahaha...
my mum would be very happy with my 'huat' results!!! hahahha...
i subst. double baking powder with only normal baking powder... the end texture is very nice though... fluffy and light... with a tinge of milk taste. I'm using magnolia fresh milk. :)
but ur botak look looks cuter leh... :)

I jus tried, my kueh is so sticky! I steamed for a long time and when tested with stick, it come out clean.
Really like kueh! Some crack, some remain botak. I omitted the rice flour and added some milo though.

My friend told me that her cup cake is also become huat kueh.. then hor.. I guess lah.. may be the heat is too high.. that's all huat lah..

Hi Aunty, Pls don't mind me ka-poh here. I think the reason why the cupcake all become huat kueh is the heat.
If the heat/fire is too high your cake will cooked faster and the surface of the cake will crack open and become dry. Also, centre will rise more, resulting in a dome.
So use med fire for this cake only.

I tried this steamed cake and my results were like dense kueh, not fluffy like yours.
I used chwee kueh moulds and steamed my cakes on med heat. After whisking the sugar & milk by hand, I added the sifted flours and baking pwd (all sifted together) into the milk gradually and stirred to mix with hand whisk. Did i go wrong somewhr? Appreciate your advice.

Thanks for sharing this recipe. Just did it and mine oso didn't become huat kueh after steaming. I believed kids will like it for the milk taste.

I made this last night for breakfast this morning. DD1 loves it! My cake didn't "huat" like the rest, it's dome-shape like yours but crack slightly. Texture is softer than Huat Kueh.

I have been your silent follower for a while now. I check your blog religiously everyday. I wish I live in the same country as yours so I can attend your class. Anyhow, I have a question. Lately, I just cant seem to find the plain version of cake flour in the supermarket. I live in Australia. Is it possible to use the self raising version of the cake flour, and maybe omit the baking powder. Would these results to the same outcome? Your advise would be much appreciated.
