Coffee Chestnut Cake

Hi Lucy

Is this a mousse cake? It would be nice if you can share the recipe?

By the way, I trid making the Sarawak Seri Kaya Cake yesterday. It turned out very dense and I had to steam for 2 hours. I wondered what went wrong but the taste is ok although the texture is not. I tried making the instant kaya but turned out lumpy, probably I forgot to sieve the egg mixture.
Anyway, I will try making the kaya and cake again. Must get it right this time.
Cheers

Hi Shirlyn,

I only steam for 1 1/2 hours. Mmm..did you follow the same way as I've done. Sometimes the heat could also be a problem. Your heat probably is not high enough and that is why you took 2 hours to steam. If you try again and unsuccessul, do let me know.

for kaya, remove the pot from the stove when you stir in the custard mixture (remember to add in some coconut milk into the custard before you pour in a streamy flow). You do this way and definitely it will be smooth.

Mmmm, this looks very interesting...is the center part chestnut mousse? and what is the outer coffee layer made of? is it poured on the cake to set? A very unique cake roll....

The cream cheese hazelnut cake came out tasting great, even my mother-in-law who doesn't like eating cake said it's delicious... thanks so much for your recipe, and looking forward for others to come... Anita

Hi anita,

Outer covering is almond sponge and the mousse is chocolate plus cooked chopped chestnuts.

HI Rimane,

That will be too much work for me. Posting recipes at random is already very tiring.
I wish I can do more but I have a lot of work to do cos I work 7 days a week in my office.
