Buttermilk Cupcakes






Ingredients:

250 gm. Butter
200 gm. sugar
3 eggs
125 gm. (1/2 cup) Buttermilk or yoghurt
1 1/2 cups Self-raising flour
1 tsp. Vanilla extract

Method:

(1) Cream butter and sugar till light and fluffy.
(2) Add in eggs one at a time , making sure that it's well mixed before the next addition.
(3) Fold in flour alternately with Buttermilk.
(4) Add in vanilla extract and give a quick stir.
(5) Spoon into 12 cupcake pan lined with cupcake papers.
(6) Bake at 170C fir aviyt 25 mins. or till cooked.
(7) Cool on wire rack before serving.

Love your cupcakes,so soft and fluffy.Could you share your tips on getting a flat top as opposed to a rounded dome that I always end up with?Thanks and appreciate your assistance.

I just followed the recipe in the books and filled the paper cups less than 3/4 but slightly above 1/2.

Hi Jenny,

No need to buy Buttermilk if you can get it. For your info, Buttermilk is easily available in Singapore.

Here is the substitute:

1 cup of fresh milk + 1 Tbsp. Lemon Juice or
Vinegar. Let it sit for about 5 to 10 mins. before using.

Hi aunty,

all your cupcakes looks so lovely. My cupcakes' paper cup always open/drop the next day. Is this due to the paper cup of low quality or any other reason ?

hi leeping,

I have come across this problem too. I think the cake is on the oily side, making it leave the paper. It's the mixing of the butter into the batter...you must do it gradually.

1 1/2 cup of self raising flour is how many gm of flour?

If I use cake flour instead of self raising flour, will there be any difference in the texture?

Hi Nicole.

1 cup of flour is about 145 gm.

Yes you can use cake flour instead of self-raising flour but u must add in 1 tsp. of baking powder and 1/4 tsp. of Bicarbonate of soda.

Buttermilk halal?? I'm not too sure. I used Dairy Farmers Buttermilk from Australia.

may i know is it possible to bake 2 dozens of cupcakes at the same time? Can i put one tray in the middle rack and the other at the bottom? Will they turn out evenly? Or do i bake one batch at a time? Because i bake 50 cupcakes for a friend's party and this recipe sounds great. Thank you.
