Traditional Fruit Cake
Ingredients:
1 kg Mixed fruit soaked in 1/2 cup of Brandy for at least 3 days
230 gm. Butter
230 gm. Brown sugar
125 gm. milk
350 gm. Plain flour
1/2 tsp. Bicarbonate of soda
1/2 tsp. cinnamon powder
1/2 tsp. Nutmeg powder
1/4 tsp. ginger powder
1/2 tsp. almond essence
1 tsp. Vanilla essence
a pinch of salt
1/2 Tbsp. chocolate paste/emulco
3 eggs - beaten
Method:
(1) Mix fruits and sugar then add in the spices, bicarbonate of soda and the essence.
(2) Boil the milk and butter together until the butter just melted.
(3) Pour the boiled milk mixture into the fruits.
(4) Pour in the beaten eggs and stir.
(5) Then add in the sifted flour and stir till well mixed.
(6) Pour into a 9" round tin and bake at 190C for about 20 mins. then turn down temeprature to 150C and continue baking for another 2 - 2 1/2 hours.

I actually wanting to try baking a rich fruit cake also but bought the wrong ingredient! the recipe ask for dried mix fruits i bought 'wet' ones instead! may i know can it still be used since the recipe actually ask for dried one to be cook with brown sugar, butter, brandy, cinnamon? Kindly advise..many thanks :D

i love fruit cakes and would like to try this recipe out! Just wondering, if i want to drench and "season" the cake with more brandy once its cooled, how much should i drizzle over it? And how should i store the cake? And how long can it be kept for? Was thinking of keeping it till Christmas so i probably can start baking it soon.

Can soak in rum instead of brandy? Will it be less tastier?

Hi Pei Chyi,
You can keep the fruit cake for at least 3 months. You can just drench it with brandy every now and then, wrap up tightly with aluminium foil and keep in the fridge. Every few days, take it out and drench again and by Christmas..wa lah...the smell will be so intoxicating then you'll be drunk even before eating.

You can use 1/2 of mixed fruits but it might sink to the bottom as the amount of fruits is too little.

yes you can omit it...it won't change the taste of the cake. The most important part is the brandy.

Thanks for your Fruit Cake recipe in your earlier post. I have tried to bake with that recipe and it was successful. I soaked the dried fruits with rum for a week and following with you recipe ingredients. The cake turns out very tasty and with a little liqueur fragrant. Now i can bake the fruit cake to serve my friends during Christmas time. Thanks a lot.

the brandy helps to plump up the fruits and makes the cake rich and moist. It also helps to reserve the cake.

the recipe for the traditional fruit cake calls for EMULCO \chocolate paste but this does not appear in the method, please help as I want to make this cake for my family and friends over the weekend.
