hi aunty, can i check with you, must the proportion of the skin vs. filling for the mooncake be 40% to 60%? becos i find it's difficult to wrap the skin on when i use this proportion, the skin is too thin. can i use 50-50% instead? thanks!

it's to your preference afterall it's for your own consumption.
50 / 50 will not look so nice but probably taste better cos not too much fillings.

I tried your previous post of snow skin mooncakes, can I cut down the shortening to 50gm instead of 75gm because I don't want to oily?
Please advise. Thanks

yes you can cut down the shortening. The shortening helps prevent the dough from being sticky.

btw, i would like to try making my own lotus paste.if i buy the skinless type of lotus, do i still have to do the step of pouring in boiling water to remove the skin? do we need to soak the lotus seeds overnite first before we start to boil them? your mooncakes always have a very nice even golden colour. did you use the fan function for the oven? thanks aunty.

Hi anonymous,

I use normal top and bottom heat for baking my mooncakes.

Omit the step of soaking if you use no skin lotus seeds and you do not have to soak overnight.

thnx aunty for your reply. so it means that if i use the skinless lotus, i would need to only boil it for a while to remove the green stems? i am excited to know you will be having the classes next year. it wil be open to everyone right?

I baked my mooncakes today, but I can't get the even brown colour like yours. I dunno what's wrong.. :( I've baked for almost 20 mins after egg glaze but the skin still light, while the top already very brown. I used your traditional mooncake recipe. Last year, I added a bit of black treacle and I managed to get the even brown. This year I've forgotten to add.

Please do keep me in the loop if you conduct mooncake making class next year.

Hi Aunty,

I forgot to mention that I had no problem with my bakes last year, following your recipe. In fact, my mum said it was good. But this year I dunno what went wrong. :( The skin is also hard n have not yet soften this morning.
