Hi Aunty,

Thanks to your advice. My 1st snow skin mooncake turn out very soft and nice.

Like to ask you a question, for this mooncake you cook the custard paste or bought those ready made?

I cooked this myself. I also bought the ready-made custar. They are quite tasteless so i added in icing sugar. I still prefer our fresh homemade custard.

Thanks for the quick replied. I intended to try out your homemade custard paste, do I have to pay any special attention. Is it alright to use bake butter skin instead of snow skin to wrap the custard paste.

Would like to confirm what flour should I use for dusting mould, hands and mooncake? Kou fen or steamed HK flour?

Hi Aunty yo,

i realised your mooncake shapes are very well defined. but mine isnt. Is is because im using a wooden mould ? i tried to press very hard, but the pattern are not well defined. Would a plastic mould or Pressed mould make a difference?

Hi Trish,

For snow skin, better to use plastic mould rather than wooden mould. I tried last night using wooden mould and it stick like what you have experienced.

one more question, i have a big problem rolling and flattening the skin with a roller. It always stick to the roller..but if i use my fingers to flattening it, they are uneven, how do you manage that?

It's Fried or Cooked Glutinous Rice flour. go to Kwong Cheong Thye or Sun Lik to buy. They have it.
