hi sherry,

white lotus paste has no caramel but added in milk powder while the lotus paste has caramel.

hi yochana, just want to ask the lotus paste is it supposed to form solid and sticky? I tried to cook pandan lotus paste last nite it just look like pau filling....soft and lumpy. Btw is it only those lotus seed with skin can cook lotus paste? I only can get skinless type in my country

hi dt,

those lotus paste which is skinless can still be cooked into a paste except that it won't be so fine and smooth as those with skin.

Sticky means you still have to continue frying till smooth and shiny.

hi yochana, thanks for ur reply.
But when i continue frying the oil oozing out and it became custard form.....then i add a bit of water it became soft again which make me unable to wrapped it in mooncake at all.

I've got a feeling that you used too high heat to fry...that is why the oil oozes out.

hi yochana, u mean it have to cook in low heat? The cookbook never mentioned how should it cook so i just use high heat

which cookbook did you use? the heat must learn to control...high and low and not high all the time or low all the time.

High heat causes the oil to leak out.

i bought a 2007 published y3k mooncakes recipe book... which didnt mention about the heat....so depressed as my lotus paste look more like "tau-sah" than lotus paste ~>_<~

Hi Aunty Yochana

I wish to make my own lotus paste but I have to work like 9.30am to abt 10pm almost every weekdays. So I am abit relunctant to do complicated cooking over weekend. Can I improvise by adding mango puree into the lotus paste?

Hi Olivia,

Wow...you really work long hours. Yes you can add mango puree to the lotus paste while cooking it but becareful, it's more difficult to fry it. Fry at low heat.
