And I finally made my first traditional mooncake using the golden syrup that i have made last week. All using your recipes, except for the lotus paste, didn't have time to make. SO happy that it looks not too bad (given that this is my first time). But will update u again when the mooncake become softer. Because it's still slightly dry now (is normal right?)

These are the small individual plastic mooncake moulds...ah...stupid me..I should have snap the photo while making the mooncakes. I will try to do it next round.
the plastic mould which I sent you are good for agar agar. if you make snow skin or the baked skin, can can press it in but don't crack the plastic.
Thank for the info.Will be careful when pressing since it's not heavy duty plastic. Hmmm, I wonder the plastic mould will melt into the the mixture if I were to make agar-agar mooncake,hehe!Don't wanna toxic everyone!
hi yochana, your coffee lotus paste is ready make type? my side only have plain lotus paste available = =. As for the cream cheese may be u can try to scoop it and chill for a while then wrap with the lotus paste. But it's kind of time consuming. regards
thanks for your encouragement. In fact, the skin has started to turn soft today (day 2), except for the bottom, because first time making, thicker skin at bottom. It smells and taste great! Thanks!
Aunty yo, I just soaked and wash my lotus seeds (as per instructions with alkaline and hot water). But it took me 3hrs just to remove the skin (for 600g). Now too tired to cook them, have to wait till tomorrow. It is normal? Is there any other easier way to remove the skin? Thanks.
after soaking with alkaline water, the skin should turn soft. Just wash it under running tap by rubbing it over a colander and you'll see all the skin stuck onto the colander.

But do we need to really peel off everything or just briefly wash? Because i did try to rub, but not all will come off easily, that's why took me so long.
Btw, i just realised that it's too early for me to cook the lotus paste now. But i had already blend them to paste. Is it ok for me to freeze the paste and cook them later?
better to cook it tomorrow since you have already blended it. After cooking, put the paste into a container then rub the top with some oil to prevent it from getting mouldy, then keep it in the fridge till it's needed.
It's plastic...I bought it from Ng Ming Huat in Johor Bahru, next to Crystal Crown Hotel in Jalan Tebrau. They sell a lot of mooncake stuff every year.

Need your advice. The mooncake can be easily remove from a plastic mould or wooden mould. Need to get one but don't know which to buy.

I used coffee lotus paste and cream cheese in the middle. Difficult to wrap cos the cream cheese is soft.

I cooked the coffee lotus paste and as for cream cheese, I added in some icing sugar and then chill it.
