Oh Rachaeline,

This is one of my dh's and my favourite mooncake..

Inside: melon seeds, sesame seeds, black sesame seeds, mandarin orange peel, salt and pepper, some fried flour and roasted walnuts.

Hi Yochana,
Need your help again! I made mooncake syrup late last night after work, and while cooling I fell asleep and this morning the syrup is so thick it can barely move in the pot.. can I warm it up to melt it down and maybe add some water to dilute? what is the right consistency of the syrup after it has cooled completely? it should be pourable, right?
Sorry to be so bothersome... I'm just all hyped up with this mooncake experience, hahaha... very grateful, Anita

This is almost like mixed nut mooncake except for the skin. Is the skin puff pastry?

Hi aunty,

very nice mooncake! Really liked this type of savoury mooncake.
I made a durian chiffon last night based on our post, but turned out quite bad. Empty in the middle area, with the mixture a little at the base. Wonder what's wrong.. I made pandan chiffon before with no issue. Appreaciate your advise. :)

Hi maureen,

Chiffon cakes are very naughty cakes to bake. Sometimes it turned out very well and sometimes it's a total disaster. It has a lot of factors to disasters like the eggs and mixing....your durian chiffon cake could be due to poor mixing cos the durian meat are quite heavy for the light cake.

I was interviewed for a programme abt my illness. I quoted looking at ur bakes and eating in front of it as one of the ways I coped with loss of appetite. Heehee

Hi Aunty,

thanks for the advice. I agree with you. Seems like the puree floated to the top, resulting the base, when inverted, sink onto the wire rack. taste wise, it's good, the room smells of durian. actually, I forgot to sift the cake flour. Could that be the reason?

I'm not too sure whether the flour is the cause but when I first started learning how to make a chiffon cake, my teacher told us to at least sift 3 times before mixing. I'm too lazy for that, I just sift once only.

Just put in some water and dilute it again. When cooled, it should be able to flow in a gradual manner.

CNA = channel news asia, the one where always reports news, money mind programme, Japan hour etc. Paiseh, i very bad at describing. MediaCorp has chan 5, 8, U chan, kids central & vasantham (sp?) and then Channel News Asia. Dunno if this is clearer.

I was told there wld be 3 ladies with ovarian cancers being featured, of which i'm one lor. Very short segment nia, becos the programme supposed to be informative and educational.

I have your bakes virtually everyday, very happy. =) Thx!
