aunty, i have some question about bakings for you. I hope you can help me cause you are my sifu. (although you dun consider me your student! Haha.)

1) I dont have high power mixer at home. so how do i make bread? you need high power mixer to beat the gluten right? so do i use my hand to knead till thin-membrane stage?

2) for making pao, may i know until what stage must we knead it? when exactly do we stop? i made pao in the past but failed because it has a "rubbery" and "elastic" texture when eaten.

3) i really wanna learn making pao and bread. Please help aunty.

Hi Chien,

You can knead with hands...remember to throw the dough hard onto the table cos this method will help to bring out the gluten in the flour. This applies to the pau also. Keep kneading and throwing onto the table until it is non sticky.

aunty, thanks for answering my question. But im abit confused.
I thought we are supposed to knead the dough until thin-membrane stage for bread making, isnt it?
but u told me to knead until non sticky only lar..
which one ar? hehe.. sorry for the confusion aunty..

Hi chien,

Both....once you have achieved a non-sticky dough, then you can do a window test - like a thin membrane.
