Hi Yochana, having seen how perfect all your different style mooncakes turn out, just gotta ask for your expertise in making lotus paste - can you tell me what proportion of oil & sugar per lb/kilo of lotus seeds to use? I want to attempt mooncakes this year for the first time, will definitely need your guidance ... thanks - Anita

Hi Lucy

I made the golden syrup earlier in the year (with advice from you) and also bought a bottle of golden syrup from KCT as a backup during my trip back to Singapore. Hope to make the traditional mooncake (your recipe) soon.

May I know how you prepare the salted egg yolk for the mooncake?

Btw, when is the Mid Autumn Festival?

PS Love all your goodies and thanks for sharing your recipes.

Hi vivien,

break the salted eggs, take the egg-yolk, rub with some sesame oil or rice wine and then bake for 5 mins.

If I'm not mistaken it's some where in the middle of September. (Mid-autumn festival)

Lucy

Thanks for your info on preparing the salted egg yolks. At what temperature should I bake the egg yolks?

Thanks again.
