Cooking Pandan Lotus Paste

Hi Aunty Yochana,
Thanks for putting a slide show to show us how you make your lotus paste :)
One question, I tried your lotus paste recently and I stopped stirring the mixture when it reached slide 8. However, my lotus paste was still sticky, and unable to roll into a ball like yours! May I know why? Thanks!

how come ur lotus seed is with brown skin? never seen that b4. Mine is w/o that brown skin. And did u add in pandan juice to make that pretty green colour? how many pandan leave and juice needed?

hi dtwhale,

I forgot to snap while pouring the pandan juice. I blended 40 blades of dark green pandan leaves and squeeze out the juice. I added in some water into the pandan leaves.

Hi Kristie,

If it's sticky, it means that your lotus paste is not ready yet.
Continue to cook till thick on very low heat. Too high heat will cause the lotus paste to "Leak Oil" - in mandarin "lou yu"

I always buy Lotus seeds with skin. They yield very good results. Those that have no seed normally get a very coarse texture lotus paste. You notice that my lotus paste is very shiny and smooth and it doesn't stick to my hands. Easy to wrap.

hi...i dont see any wrinkle on ur hand....only smooth and shiny hand ^_^
I don think i am able to get the one with skin on, Where did u actually get it? i have never seen it b4.... not even in s'pore.
Just want to know what is the effect of akaline water in soaking lotus seed? if i am using the one w/o skin do i still need to use akaline water?

hi dtwhale,

the alkaline water soaked with the lotus seeds will help easy removal of the skin.

I bought these seeds from Ng Ming Huat in Johor Bahru.

So is it mean that if i use the one w/o skin i dont need to soak it with alkaline water? The only type of lotus seed that i can find

Hi Aunty,
Your paste really looks like store bought ones!!! I found lotus seed with skin here. But they put as 'dried lotus nut', is it the same? Also, mine is already in halves, so there's no green stuff in the middle. Is ok right?

Ya..it's the same. Sometimes when I can't get the the whole nut, I'll also use the halve nuts.

I don have a pressure cooker to cook the lotus seed. Is there other alternatives that I can use? Slow cooker? Hope to receive your reply soon as I would like to try making my own lotus paste. Thanks in advance

I tried your lotus paste is was really good!! Thanks :) May I know how long does your lotus paste last? I put it in the fridge, after 3 days I could see water and my mum threw it away!! How would I know if the paste is spoiled?

Hi Jocye,

when it's fresh, try to use the lotus paste. Anything that's in the fridge will have some condesation and having water on the lotus paste is very common. Use a kitchen absorbent paper to dap dry and viola..you can use it again.

I have been finding homemade recipe for Lotus paste. Yours looks as good as the commercial one. and if i had the lotus seed without skin do i still have to saok the lotus seed with alkiline water?

I just seen your slide show but unable to find the recipe would you kindly share the recipe with me. Thank you in advance.
