Watermelon Lapis











Ingredients:
(A)
16 egg yolks
6 egg white
240 gm. sugar
250 gm. Hong kong flour or any superfine flour
1 Tbsp. Ovalette
50 gm. ice water

(B)
500 gm. Butter
8 Tbsp. Condense Milk

(C)
30 gm. watermelon milk powder
2 tbsp. black sesame seeds
green colouring
red colouring

Method:

(1) Cream (B) till creamy.
(2) Whisk (A) at high speed till thick and fluffy
(3) Fold (A) and (B) together.
(4) Weigh 480 gm. for green colouring.
(5) Weigh 480 gm. for plain portion.
(6) Balance portion, add in red colouring, water melon milk powder and then the black sesame seeds.
(7) Bake in a 8" square tin.
(8) Spread 120 gm. green colour portion into tray and grill till cooked. Continue to grill and bake till finished. Every layer - use 120 gm. of batter

Note: 2 layers green / 2 layers plain / 7 to 8 layers of red portion / 2 layers plain / 2 layers green (top layer)

was wondering if it is steam or baked? ... i tried ur watermelon steam cake the last time... still got some balance of the watermelon milk powder as well as the vanilla powder... :)

hi aunty, the red part do u use watermelon milk powder or the strawberry milk powder,? i ever make this watermelon lapis before but i use strawberry milk powder it taste better. :))

I anyhow use a normal plain lapis recipe and divide equally and then add in watermelon milk powder.

YOu try Phoon huat. They sell watermelon milk powder. They used it for bubble tea.

I used grill mode - about 10 mins each layer.

Hi Aunt Yochana.
This is so COOL! It's so beautiful! I realised the layering is not very distinct, as in normal lapis cake. Does it mean that you didn't grill each layer till it's very browned? Even though it's not very distinct, I can still see that it's a lapis cake. I shall try it one of these days... Heehee...:)

If you want the lapis to be very distinct, grill longer till it's more brown.

was studying the recipe.. steps 4, 5 and 6 ... how much of the portion shud we partition out for the red one? (480 - green; 480 - plain... red?)

You weight the 480 first then balance will all go to red colour.

hi yochana, can u tell where to get the watermelon powder and how it taste & look like.

I did do a similar outlook watermelon lapis with another recipe....

i found that w/o top layer of green & white it will look more like watermelon slices ^_^

What a mouth watering cake! Yochana, just wondering, do you grill the layers from the first right to the last? You did'nt use the oven heat at all? Some teachers use oven for the first and last layer. If so, bake at what temperature? Sorry for asking so much.

I'm impressed with your work. need some advice.Can i use a small oven to bake cake lapis?i've tried few times but it didn't goes well.the below part and all the sides are so hard.Was that because i bake it too long(for every layer) & the temperature was too high?some more the colour was not the same as i wanted it to be though i used the same colour based on each recipe.I really admire what you did and wish i can do the same.Thanks.
