Hi there, are those chocolate covered almonds on top of the cake? ... I've been wondering if the metal disk that your cakes sit on serve as the cake board that you decorate on, and if so how do you transfer the finished cake onto the box/cake holder for transporting?? or do you use paper cakeboards when it is for "take-out"?? Normally if it's an order, I will use a cake board and if it's for own consumption, I'll use a metal plate. It's easy to transfer from one plate to another. Use a big flat spatula specially for transferring cakes. Looks like a frying ladle but much bigger and it's plastic.
Just wandering how much is your consumption of baking supplies such as whipping cream, flour, sugar, cream cheese, eggs costs. It must be equivalent to a bakery store.

those are caramel coated almonds.
