Chocolate Mint Torte
Biscuit Base:
250 gm. Chocolate Biscuits of your choice (Khong Guan Biscuits)
30 gm. almond nibs
100 gm. melted Buter
Chocolate cream filling:
300 gm. chocolate - good quality
9 gm. Gelatine powder mixed with 30 gm. of water (microwave for 20 secs)
90 gm. liquid glucose
90 gm. water - warm
380 gm. Whipped cream - whisked
1 tsp. peppermint essence
Topping:
200 gm. dark chocolate
100 gm. UHT whipping cream
1 tbsp. liquid glucose or Corn syrup (Karo brand)
Method:
(1) Biscuit base: Blend the biscuits and then mix with almond nibs and melted butter. If mixture is too dry, add in a little more of melted butter.
Press mixture into a 9" springform tin (round) or a loose-bottomed tin. Chill in refrigerator till set.
(2) Double boil chocolate till melted. Add in liquid glucose and water, stir till well combined. Add in gelatine mixture and stir.
(3) Whisk cream till slightly thickened. Fold in chocolate mixture and then add in peppermint essence. Pour mixture into prepared biscuit base and chill for at least 4 hours till set.
(4) Pour Topping on top and let it set before serving.
(5) For topping: heat cream then add in chocolate and liquid glucose and stir till combined. Pour on top of set chocolate cream filling.

However i replace corn oil with butter more fragrant.

ReplyDeleteInstead of Liquid Glucose, you can use Corn syrup (Karo Brand). You can get it from Cold Storage. Liquid Glucose is available from Sun Lik.

Hey! The minute I saw this I knew I wanted this for my birthday and I did it! Initially I got it wrong, I used the dairy whip for the mousse and the taste was yucky. Lucky I tried a small portion, so ended up heating the whipped dairy cream (which didn't seem right but didn't want to waste) and pour on the chocs. Anyway, the end result was fabulous. It was a great bday treat for me!!!!

ReplyDeleteI've tried this, taste is good and refreshing. The topping is quite 'chewy'and centre cream is soft. Is this the right texture? I'm unable to slice as nice as yours. How did you do it? I did chill for ~8 hours, and because the cream is still soft, I froze it and the cream did turn harder but difficult to slice. Thank you for your advice.

ReplyDeleteI've tried making one and its very nice. All my colleagues and family love it. But there is a problem. The topping chocolate becomes harden when I leave it in the fridge overnight. I used UHT whipping cream for that. May I know where is the problem or it is meant to be like this? Thks!

ReplyDeleteUHT whipping cream is Diary whip cream like President, Elle Vire or Fischli. You can get Elle vire from sun lik but you must becareful when you whip it.

Everything seen to be fine so far, i think?
When i boil the Topping for long time, i notice that there is alot of oil/liquid(?) coming out from the dark chocolate. Is that normal?
Then later, in the end, i throw away the liquid.
When i put ice underneath the bowl, and i keep rolling the chocolate, it become like a chocolate dough.
My filing is very soft. When i put the topping, it looked like the filling going to sallow down the toping. lol
After i put in freezer, the next day, when i take out & put in the room for 2 min, it melts.
Is that normal?
Any advice, please do let me know.
