Cheese Crunch

















Ingredients:

160 gm. butter
90 gm. sugar
1/4 tsp. salt
1/2 egg
3 slices of Blue Box Kraft Cheddar cheese - cut into small cubes
200 gm. Plain flour
1 tsp. baking powder
3/4 tsp. chillie powder

Method:

(1) Cream butter, sugar and salt till creamy. Add in eggs and cheddar cheese.
(2) Fold in flour and chillie powder.
(3) Roll into small balls and press it down with a fork to obtain some pattern on top.
(4) Bake at 160C for about 20 mins. or till crispy.

They look just like butter cookies.Are they as crunchy as their title?
Aunty,I am looking for a proper stand mixer.People have recomended kitchen aid or kenwood.May I know what brand you use and its advantages?

Hi Alinia,

I used both brands.

I suggest you get a Kitchen Aid. They are very good for home use and they are very silent too.

Hi Leen,

No particular chillie powder needed. I bought loose form from Giant. Sometimes I buy in pkt form.

you can omit the chillie powder if you want to and substitute with some dried parsley instead.

For cookies, you don't need a machine. Just use a spoon to stir vigorously (sugar and butter) till it turns pale white.

You can go to any market, Giant, NTUC supermarket...a lot of stalls sells chillie powder. Alibaba is the brand.

i noticed that 1/2 egg is used for this recipe. pls pardon my ignorance. but does 1/2 egg mean 1 egg beaten then seperate into 2 portion?

You're right...beat 1 egg and divide by two.

or 1/2 egg = 30 gm.

Thks for the recipe. I accidentally poured in 1 egg instead of 1/2 egg today. Mixture turned out a bit too soft for moulding into small balls but the taste after baking was great! Very crunchy and cheese fragrant. Cheers n regards, Chris

May I know roughly the amount/weight of cheese needed for this recipe?

I grated about 50g of block cheddar for this. The cookie didn't turn out very crunchy, but tastewise it was yummy.

Please advise.

How long can I store this chesse cookies? planning to bake it for 2016 CNY but maybe baked it like 2 weeks earlier. Will it get stale by then? Kindly advise
