How much did you fill up the cup to get this shape? Why my cupcakes & muffins become hard the next day?

Hi anonymous,
Cupcakes will not turn hard even after 3 days but muffins is best eaten on the day that you baked.
I normally fill it up to 3/4 of the cup's height.
