Banana & Sunflower Seed Stir Cake











Ingredients:

130 gm. cake flour
1 tsp. baking powder
1/2 tsp. Bicarbonte of Soda
1/8 tsp. salt
3 eggs
130 gm. fine sugar
100 gm. cornoil
60 gm. Sunflower seeds
20 gm. toasted desiccated Coconut
200 gm. Sliced Bananas
1 tsp. vanilla essence or 1/4 tsp. banana essence

Method:

(1) Sieve the cake flour , baking powder, bicarbonate of soda together.
(2) Mix eggs, sugar and oil into a mixing bowl and stir till well blended.
(3) Add in sifted ingredients and the rest of the ingredients.
(4) Pour into a loaf tin 9" x 3" and bake at 175C for about 40 to 45 mins. or till cooked. Stand cake in tin for at least 5 to 10 mins. before unmoulding onto a cooling rack.

    Is the recipe same as the steamed banana cake with addition of sunflower seed stired in? Your cake look like baked cake, so nice colour. Pls. advice, thanks.

    i see that u're baking quite alot of butter cakes recently, i baked ur previous butter cake, but my dad says not buttery enough. (he likes it super buttery).
    so was wondering if u can share the recipe for ur recent butter cake and also this one.

    I noticed that corn oil is used instead of butter in this recipe. How's the taste of this cake?. I have just bought this book on easy stir n bake cakes, all recipe in this book uses corn oil. Looks very interesting & I guess it should be healthier.

  9. Hi aunty, recipe says "Mix eggs, sugar and oil into a mixing bowl and stir till well blended" Does it need to be till ribbon stage? Or is it enough to just mix with hand whisk?

    If you want it to be tasty, use Melted Butter then. I followed the recipe to the T . I used cornoil but melted butter will be very tasty.

    I just made the cake and it is moist and taste pretty delicious.
    I used bare hand to mix the dry and wet ingredients and not by electric mixer. I also replaced the sugar with brown sugar. Should it be taste as moist inside ? The top of the cake is cracked in the centre.... pls advise....tks

    There are many shops in Taiwan selling Bicarbonate of Soda. Well, you can omit it.

    Most Stir cake will be moist. Yes you can sugar to brown sugar. Whether it's bare hands or wooden spoon, it should work. Crack on top is O.K. I personally like the crack on top.

    Bicarbonate of soda - is an alkaline raising agent used in recipes that contain an acid ingredient such as buttermilk or lemon juice - ideal for soda bread. It is one of the ingredients of baking powder. It can be mixed with cream of tartar to produce a darkening effect in recipes containing chocolate, or in ginger cakes. Bicarbonate of soda can also help neutralise strong fruit acids like those in rhubarb or blackcurrants, alleviating the sour flavour.
