Hi Aunty, I saw fr some kueh recipes that requires caltrop starch or 'shen fen'. What is this starch and can I replace it with something else as I cant find it anywhere?

I don't any other recipe using the watermelon powder. Yeah, I don't like the taste too.
This watermelon tart uses watermelon juice.

caltrop is eaten during the mooncake festival. It looks like a bull's horn.
You can replace it with arrow root flour,m sago flour or waterchestnut flour. Sometimes a simple tapioca flour will work as well.
