Warm Molten-Centred Chocolate Cake
Ingredients:
(makes 6 to 8 cupcakes depending on the size of your muffin tray)
60 gm. unsalted butter
60 gm. sugar
1 large egg
90 gm. Self-raising flour
1 Tbsp. Cocoa powder
Fillings: any chocolate or Ganache
For dusting: Snow powder or icing sugar
Method:
(1) Cream butter and sugar till creamy.
(2) Add in egg and beat till well combined.
(3) Add in S.R. flour and cocoa powder.
(4) Spoon 1 Tbsp. of batter into paper cups , break a square of chocolate or scoop some ganache on top then spoon another tablespoon of batter on top of chocolate. Bake at 180C for about 25 mins.
(5) Leave it to cool completely then dust with some snow powder.

I made muffins yesterday and like your recipe, I placed a small piece of chocolate halfway and top up with another half of batter,however, the chocolate sank to the bottom, unlike yours which seem to stay at the middle. My muffin batter is not watery and quite creamy. What's the problem, please enlighten me. Thanks.

probably your chocolate is too heavy. I used the thin square block "Lindt" chocolate , they are light and won't sink to the bottom.

I made these this morning and put marshmallows in the centre instead. It was great, except somehow the marshmallows rose to the top and started spilling out of the muffin cup. I find this recipe less oily than the usual muffin recipt, which is great for me n the kids. Thks for the great recipe. Cheers n regards
