Aunty, May I know if this recipe is from the book Nyonya Kuih Passions by ANDREW Kow? If it is, I have a few questions to ask you.
1) Many recipes in the book calls for Mung Bean Flour. May I know if I can substitute with Hoen Kwe Flour?

2) Many recipes ask for coconut milk. May I know if they mean thin or thick coconut milk?

If you dont have the book, it is okay. Thanks aunty.

Hi su wen,

yes you can use hoen kwe flour for mung bean flour. Sun Lik sells Mung bean flour from Thailand. I used that....

Coconut milk will depend on what recipe you're making. Ask me individually ok.

Erm.. The recipes which call for coconut milk in the book are kuih lapis, the kuih koci you have made, sweet potato kuih with coconut, baked pumpkin cake.
These are the recipes i would like to try but I am confuse which type of coconut milk to use. Thank you aunty..

Hi su wen,

Aunty is very lazy, so I went to NTUC to buy the packet coconut milk - Heng Guan from the cold section. They have expiry date.

For Kuih Koci, I mixed 2/3 heng guan coconut milk with 1/3 water.

Hi Aunty,
this process is using the blowing sugar tool
blow for his heat , body and pan , attached his eyes , lips, nose and ear . Hair use the scisor to cut attached on the heat piece by piece , mould his hat cover the gap.
arm, leg , boots is rolling on the warm tray then mould and attached to the body his arms , pan his leg boots are the last.
You can try this with marzipan or fondant .

Woah...sounds difficult. Blow torch?
Did you do this at home too? How does the blow torch look like? I have 2 for Creme brulee.

hi hi ,It is dificult !
sorry , not blow torch it is the pump sugar , just like making crystal
using pump sugar blowing a balloon and shape the figure by hand while the sugar still hot
blow torch very useful for sugar work , I use blow torch for finishing touch , make it look shine and attach the pieces together.

btw , I am looking for the walfle recipe , HongKong , Asian style which has coconut and custar filling, if you know the recipe please email me thanks
