Can I seek you advice? I tried baking pandan chiffon cake last Saturday. Twice, i had the same problem. I bake using a loose base tin. The egg whites are beaten stiff....when I lift up the whisk, the mixture stands in a peak. Isn't thaht stiff peak? How stiff should it be? For the first one, i beat slightly more, the egg whites is stiffer than the 2nd time. But the cake also ended sinking in the middle when I overturn it. Do you know what cause the cake to sink at the bottom?
sinking at the bottom? I don't really know what you mean. Can you email me the photo? Which recipe did you use? All the recipes that are posted by me are tested recipes.
I did the pandan chiffon. Oh, i did not take a photo of the failed cake. The cake rose nicely in the oven. I took it out, overturn it and let it cool. Then part of the cake fall off, so I have to remove the whole cake fm the tin. The bottom of the cake sunk in, like a big hole in the middle.
I thought I whipped the egg whites to stiff peak....When i overturn the mixture, it did not fall off.
Would you be able to know what I did not do correctly?

ReplyDeleteDid you by mistake went to grease the chiffon cake pan? Another reason for falling out cakes is that they are undercooked.

I did not grease the tin. Undercooked? The cake tasted nice. It was cooked. Just not fluffy enough as the bottom sunk in.
