Hollandse Peach Tart

aunty, one question...can i use optima flour batter on a swiss roll pan? since i am not able to evenly slice a cake for layering the mousse, i plan to just stack 3 swiss roll layers with the mousse in between.
also, since i am not getting chocolate optima mix,will adding chocolate emulco to the plain mix give a good chocolate sponge?
Looks amazing. I'm wondering if this is supposed to be what the Dutch call "vlaai" as "Hollandse" in your title obviously hints that it is Dutch and vlaai is the only thing I can think of that looks somewhat alike. Any mentioning of it in your recipesource of this tart?
Sure thing, aunty! Thanks for the tip. Canned peaches are fave desserts for kids that's why I have stock of sliced ones at home. I'll start to stock peach halves from now on :)

Hi anuja,
As what you have suggested, it works well.
AS for the optima flour, besides adding in chocolate paste, fold in about 20 gm. of cocoa powder.

Firstly your batter must not be on the watery side. It will sink...
When you slice your peaches, don't slice too thick. The weight will cause the peaches to sink into the batter when it's in the oven.

Thanks aunty. I used the peach slices straight from the can. The batter wasn't water due to ground almond. The depth of the pan as deep as yours.

next time don't buy the slice peaches. Buy Halve peaches and slice thinly yourself, then it won't sink anymore.
