Chocolate Mousse Cake

Need to seek your expertise. Recently I bake a chocolate cake for my son's birthday. I do not normally iced the cake as my family do not like icing of any kind. Anyway, just to make the cake look nice I decided to cover up the cake with chocolate icing, topped with strawberry. The cake looked beautiful when iced. I then left it in the fridge for the next day (birthday). Next day, after taking out from the fridge, what I noticed it that on thawing, water droplets started to appear on the surface of the cake. Question - how do you avoid this unsightly water vapour ? I did cover the cake whilst in the fridge. I tried to mop up the vapour but ended up with pock marks here and there - help ! All your cakes looked so nice .... put me to shame !! Would really appreciate your expert advice.
By the way, where did you get this special mould - it is really sweet.
Water condensation is bound to happen for our normal home fridge. For confectioneries, they buy special fridge with a certain degree to prevent condensation.
I bought this special mould from Chong Trading. It's a set of 3 plastics , a tray and a pusher.
Yummy..... Been browsing ur blog for almost 6 months. Never fails to make my saliva drools from looking at ur cakes. All of them looks Soooooooooo yummy.. yummmy... yummy.
