  6. Hi aunty yochanna,
    I've been reading your blog for some time now and I looked through your cheesecake recipes and I was just wondering what is the difference in texture between those that you bake at 160degC in a water bath and those that you do not bake at all? I have made non baked cheesecakes on a few occasion but I do not like the texture, it feels too smooth like i'm eating all cream. Also, how exactly do you do it when it is baked in a water bath? Please advise. I'm really not very good at cheesecakes. Thank you.

  7. Hi cookie monster,

    if you feel that the cheesecake is too smooth, that means your recipe contains a lot of whipped cream. You should get those with high amount of cream cheese instead.

    Steam bake means putting a tray of water in the oven while baking the cheesecake.

  8. Hi aunty yochanna,

    the recipes that i used to make do not contain whipped cream. They only have cream cheese, vanilla essence, lemon juice and gelatine with water. I'm not sure why i still find it very smooth. I just cannot get it to the texture like those i eat outside, looks rough but taste smooth and creamy. Mine always looks smooth, like i'm eating pure cream cheese.

    There's lots of baking books in usa. Try Cake Bible, Bread Bible, Pastry Bible by Rose Levy Berandum. Oops...looks like spelling mistake but I'm too lazy to take out the book..
