Lemon & Raspberry Cupcakes










Ingredients:
(Makes 12)
3/4 cup ( 1 1/2 sticks) 188 gm. Unsalted butter (Room Temperature)
1 1/2 cups icing sugar
3 tsp. grated lemon zest
2 large eggs
1 1/4 cups Self-Raising flour
1/4 cup Buttermilk
2 Tbsp. Fresh Lemon Juice
12 tsp. of seedless Raspberry Jam

Frosting: Mix together

1 1/2 cups of icing sugar
1 1/2 to 2 Tbsp. Lemon juice or Raspberry Juice
1 1/2 tsp lemon zest

Method:

(1) Beat butter, icing sugar and lemon peel till fluffy and pale yellow.
(2) Add eggs one at a time , beting to blend after each addition. Beat in 1/2 portion of flour. Add Buttermilk and 2 Tbsp. Lemon Juice and beat to blend. Add in remaing flour and stir till well combined.
(3) Drop 1 rounded tablespoon batter into each muffin cup. Spoon in 1 tsp of raspberry jam on top of batter and then spoon in another Tablespoon of batter on top.
(4) Bake at 180C for about 25 mins.
(5) Leave cupcakes to cool completely and then pipe or spoon frosting on top of each cupcake.

Did you use raspberry jam as filling and in the frosting or was it the actual fruit?

Hi anonymous,

I used cream cheese frosting. I use the fresh fruit for the frosting by smashing it and then drain the juice and stir into my cream cheese frosting.

I used self-raising flour for this cupcake.

Cake top and Top flour are almost the same.
