Creamy Coconut Cupcakes

Dear Yochana, i am a begginner in baking.i am using a desk-top convection oven.I noticed that whenever i tried the recipes on my oven,the results tend to be different.For example i used lower slot,upper lower fire 'without' fan to bake muffin according to the temperature and time given but the bottoms were burn,if i used the middle slot then the top will burn.If i used upper and bottom fire 'with' fan then the muffins become dry.Pls advice.thanks in advance!
Use Top and Bottom heat at 175C and bake for 20 to 25 mins or till cooked.
Don't worry about the burnt top. Always peep into the oven occasionally and see whether the top is getting too brown. If it's already golden brown, place a piece or two aluminium foil on top of the muffins and continue baking till it's cooked. Try this method and let me know how it goes then I'll think again.

Dear Yochana, Thanks for the advice.But do i bake it "with" or "without' fan?Are all u recipes called for conventional baking (without fan)? Sorry to ask so many questions.
Some ppl like to use fan but from my experience I much prefer to use without fan. With the fan on, the top seems to get brown very fast thus giving the cake an uneven colour.
