Coffee Cupcakes










Ingredients:
Makes 12 cupcakes

1 Tbsp. Hot water + 1 Tbsp. Coffee granules
120 gm. Softened butter or margarine
120 gm. soft light brown sugar
2 eggs
1/4 tsp. salt
130 gm. Self-raising flour
1/2 tsp. Baking powder
2 Tbsp. Sour cream or yoghurt

Icing:

230 gm. sifted icing sugar
3 - 4 tsp. warm water
1 tsp. instant coffee granules + 1 tsp. hot water

Method:

(1) Cream butter, salt and sugar till creamy.
(2) Add in eggs one at a time till evenly comnbned.
(3) Sift in flour and baking powder and then beat together till smooth.
(4) Add the dissolved coffee mixture and the soured cream and mix until well mixed.
(5) Spoon the mixture into the paper cups and bake at 175C for about 20 - 25 mins. or till cooked. Cool on wire rack.

To make icing:

Place icing sugar into a mixing bowl and add in water gradually to a make a coating consistency that will cover the back of a wooden spoon. When the cupcakes are cold, coat the tops with the white icing, then quickly pipe the coffee icing in parallel lines on top. Using a skewer, draw across the piped lines in both directions. Leave to set before serving.

HI Yuri,

Don't fill up too much in one cupcake and it will be flat on top. Another point is that the batter must be more watery rather than thick.

do you have any recommand brand for stand mixer that can use to mix dough for bread. my bread machine is down and decided not buy bread machine cause only using it to mix dough.please advice.

Actually a Kitchen Aid is good enough for home-made bread. There again, it depends on the volume u are making. For bigger volume, get Spar Mixer from Phoon Huat. It's good for bread mixing. Even a Major Kenwood is good enough if you want to make ..say...about 500 gm. of bread flour.

Thks for posting the recipe. Would like to just check with you on the coffee icing. Do we take out some of the white icing from the 230gm portion n add in the coffee granules with hot water to get the coffee icing? I am not too clear on that part. Appreciate your clarification on it. Thks n regds

Hi aunty, May I know whether we are supposed to grease a bundt tin with pattern on it? Cause the intricate pattern might result in the batter getting stuck to the small pattern right?

Yes yes you need to grease the bundt pan heavily otherwise it will get stuck.

Thank you for yr receipe, I have a few question, hope u can help me.
I've tried last nite, before it was fridge, the cake seem to b soft but this morning i tried it was hard & sticky, is it the right texture? regards the sugar , is it the sugar that normally ppl use to cook gultinous ball come in orange & brown?

Beat meaning use mixter to beat will the cake become hard or just use hand to mix well. Mrs owyong

You can either beat in a machine or just use a spatula. For me, I use the machine at low speed.

No...that sugar is wrong. You can get the brown sugar in NTUC - CSR brand or any brand.

The cake should be soft even after 3 days. Somewhere must have gone wrong..

thank you very much for your kind words.


I think you have to add in extra 50 gm. cake flour if you want to bake into a big cake so that it's more stable. For cupcakes, normally you don't need so much flour. Bake at 175 to 180 for about 45 to 50 mins. or till cooked.
