Surabaya Cake
Yellow Cake:
10 egg yolks
100 gm. sugar
1/4 tsp. Vanillin Powder
125 gm. melted Butter
a pinch of salt
60 gm. cake flour - sieved
1/4 tsp. baking powder
Chocolate cake:
5 egg yolks
50 gm. sugar
1/8 tsp. vanillin powder
65 gm. melted butter
a pinch of salt
10 gm. cocoa powder
20 gm. cake flour
1/8 tsp. bicarbonate of soda
Any Jam for sandwich : Raspberry / Strawberry / Pineapple / Butter cream
Some raisins (optional)
Method:
(1) Whisk egg yolks, vanillin and sugar till thick and creamy.
(2) Fold in fold mixture and melted butter with a spatula.
(3) For yellow cake, pour into a 9" square tin and for chocolate cake, pour into a
9" x 5" tin.
(4) Bake for 20 mins. at 175C.
(5) Leave to cool completely before sandwiching them together. Cut the yellow cake into half, making 2 pieces of yellow cake.
(6) Spread some jam or butter cream on the yellow cake. Sprinkle some raisins then top with the chocolate layer. Spread jam or butter cream again, sprinkle raisins and top up with the 2nd yellow cake.
(7) Slice and serve.
Note: This cake has very little flour. Fold in the flour lightly.

in jakarta, it's also very popular to "stack" the lapis surabaya using pineapple jam... yummy!
during my CNY holiday in jkt, my brother brought lapis surabaya which is only two layer, white & chocolate, instead of buttercream, they apply chocolate ganache and sprinkle with some raisins (soaked with rum).
hm... u makes me drolling abt lapis surabaya.... going to make it tonight.. after work :)

I did sprinkle raisins (but never soak in rum)....will do that the next round. I just used hot water to plump it up.

Yes you probably could have overmixed your yellow portion. Egg yolks are used in this recipe to give the cake the softness.
You only need 1 layer choc and 2 layers yellow and that is why I gave the different sizes but u can use two 9" sq if your batter suffice then slice accordingly.
As for steam huat kueh...it's a very bullying type of kueh. As what you've mentioned, sometimes smile and sometimes it doesnt'. For Wa kok kway, it depends on your fermented rice - whether it's properly fermented or not. Sometimes also due to mixing or your Eno is not working anymore. Sometimes eggs also play a part...not fresh enough. So there are many factors to unsuccessful huat kueh which you have to practice and know where you went wrong. Even I sometimes gets huat kueh that doesn't smile.
