Dear Aunty Yochana,

When I bake a butter cake or fruit cake, all my choc chips or fruits usually sink to the bottom, so it makes the bottom of the cake a bit densed but the top is soft & nice. What did I do wrong?

Hi Joanna,

Before adding fruits into the batter, toss it with some flour and mix gently, taking care not to deflate the batter.

Do I have to do the same for choc chips as well? Or just fruits? Flour can stick to fruits but for choc chips, can flour help too?

Hi joanna,

for choc chips, the food will not stick onto it. What u can do is to sprinkle on top rather than mixing into the batter.

Hi Aunty,

Is this the same as cream cheese muffins? Or similar ingredients?

If not, possible to share the recipe?

For the cream cheese muffins, why is the muffins quite hard and not soft and moist? Is it supposed to be like that?

Hi angeline,

this is a different recipe.

I think it's not the recipe cos mine is soft and moist. I think you overmix your mixture and cause it to become hard.
