i will like to ask u a few questions regarding some steps in ur spongecake recipe.

when u sae whisk the eggs n sugar til light n fluffy, do we use a whisk or a fork will do? n wat is the definition of light n fluffy? is it when the egg starts to foam?

and also, wat do u mean by becareful nt to deflate the egg when folding in the flour. wat is deflating eggs?

pls help as these terms appear in other recipes too n im stuck. thank u v much! :]

Been looking at your blog n your culinary skills are good.
I am new to baking, can i ask u some questions here?
For the chocolate chips n walnut cookies, can substitute bicarbonate soda to 1 tsp baking powder?
For chendol jelly, where can i buy the chendol?
What is Gula Melaka?
Can i use normal sugar instead of palm sugar?
And for chendol layer, what other flour can use beside cornflour cos i have only plain flour.

Hi gin,

Whisk eggs and sugar using electrical beater till it doubles in volume and creamy pale in colour.

Deflate means: bursting off all the bubbles in the eggs and collapsing it and turned watery. You need bubbles to make the cake light and airy.

can just omit the bicarbonate of soda if you don't have.

You can either make your own chendol or buy from supermarket. It's acutally made from hoen kwee flour, pandan juice and alkaline water.

Palm sugar is actually Gula Melaka. It's sugar make from coconut milk.

You can use tapioca flour to substitute for cornflour.
