Granola Cookies
















Ingredients:

130 gm. unsalted Butter
1/4 tsp. salt (cut down to 1/8 tsp. if using salted butter)
100 gm. brown sugar
1 egg yolk
grated rind of 1 lemon
130 gm. plain flour
1/4 tsp. Bicarbonate of Soda
1/8 tsp. baking powder

Granola mixture:

50 gm. rolled oats
70 gm. raisins
40 gm. orange peel
40 gm. crushed cornflakes
60 gm. cashew nuts - chopped and toasted
20 gm. candied ginger - chopped
3 tsp. sesame seeds or flax seeds

Method:

(1) Cream butter , salt and sugar till creamy.
(2) Add in egg yolk and continue to cream before adding in lemond rind.
(3) Fold in sifted flour, baking soda and baking powder.
(4) Fold in granola mixture until well combined.
(5) Using a small cookie scoop, scoop onto tray and bake at 170C for about 20 mins. or until light brown.
(6) Remove from oven and leave cookies to cool before storing in airtight containers.

Note: You may replace candied ginger with green / red chopped cherries.

I've tried a few times baking cookies but always not crispy at all...may i know if u use rubbing in method or jus throw everything in the mixer?...and the butter used is at wat stage.

I've tried baking cookies a few times but it always not crunchy as my batter seems abit gooey..is it correct?..the butter used is normally at wat temperature and wat method is used to mix the butter/sugar with flour?

Hi florz,

Try to used chilled butter for your cookies and if you find your dough a bit too soft, add in a little more flour and chill in the frige for easier handling.

Bake cookies at 160C.

Hi florz,

I used a mixer to cream my butter and sugar first then add in eggs, then the flour and mix into a soft dough. Do not overmix.

Ok, I'll try the next time with chilled butter as I've been using room temp. butter for my cookies.

Try JASONS and cold storage and some other supermarkets. I forgot exactly where I bought them.

Just add up the granola ingredients and that should be the amount to be used.

i jus tried your cookies, very crispy and nice! but it crumbled easily cos felt like not enough dough to hold the granola.. but it tastes great anyhow! thank u for sharing :)
