Hi Aunty Yochana,

Like to seek your advise on how to make the ganache.

I tried a few times, failed every time.

First I just double boiled with baking chocolate a little butter. The chocolate ganache won't "solidified" when it's cool down. It still remain very sticky n running.

On the next tound, I double boiled the coumpound chocolate alone. Maybe some water went into it or whatever, it become lumpy.

Next, I tried double boiled baking chocolate alone. Some how it got burnt!

I like all your chocolate ganache. They are absolutely perfect! Can u advise how to do that, if possible the steps.

Hi Mool,

For Cookies, I don't use Ganache to coat. I just melt the chocolate in microwave for 30 secs burst and wa la....can coat already.

Becareful if u microwave white chocolate. They are very sensitive and normally 25 secs is enough otherwise it will either harden or turn oily.

For Ganache, Boil your cream or milk to just boil then pour onto the chocolate (remove from stove) and stir till smooth, add in butter and continue to stir to smooth. That's all...

Thanks for the advise, I will try out again.

I got another question abt Pineapple paste. I tried a batch of pineapple yesterday. The paste was too soft and a bit too sweet. Is there any way I can salvage and make it more "harden and sticky". Thanks for the advise.

Hi Mool,

Cook a little longer, it will become harder but becareful, it can turn into as hard as rock.
