Mini Fondant Cakes

I made these little cakes for an intelligent dear little chubby 8 year Burmese girl who tumbled down a long escalator with her mummy. I'm totally touched by her braveness. She was so protective over her mum that even when she's suffering from severe pain with scratches and bruises all over her elbows, she denied that she's in great pain (at that point of time, her eyes were welled with tears) as she was more concerned about her mum. She felt guilty jumping and hugging her mummy while on the escalator which triggered off their unforgettable fall.... I hope more children and parents will be more careful when they are on the escalator. Anyway, all goes well now...Wishing her a very Happy and Wonderful Birthday!!!

    Can you recommend or suggest some good brand home use baking oven? If possible, can advise on the type or features of the oven? Coz different brand still have their individual specification.

    Lovely fondant but I know I will never be able to make it. Very good handwork, the other day I was asking you why my cupcake & franganie tart sank, thanks for your advice, I will keep in mind. Now I am trying out kueh bahulu for CNY, I do not have a very good & nice recipe for this, normally I tried using egg sponge cake recipe but it is not that soft & fluffy & hardern after a while, could it be the sugar cos I normally reduce the sugar from the recipe as I do not like to eat too sweet. Please advice & if you could kindly post a recipe for KUEH BAHULU. Thanks

    Kueh Bolu is so cheap but difficult to make. What I did is scoop the beaten egg and sugar and add in some flour then straightaway int the hot mould. If you prepare a lot early, the batter thickens and it becomes hard. You got to scoop little by little.

    I got the recipe from whatscooking - Peggy weaver

    Try this:

    16 ounces white mini marshmallows (use a good quality brand)

    2 to 5 tablespoons water

    2 pounds icing sugar (please use C&H Cane Powdered Sugar for the best results)

    ½ cup Crisco shortening (you will be digging into it so place in a very easily accessed bowl)
