Hi Aunty,

Is this recipe from Alex Goh or Kevin Chai? I ever tried Chocolate Brioches recipe from William Sonoma, but the result was not so good. It just like normal bun with chocolate chips in it. Not as soft and fluffy as yours.

This recipe is from a malay book called ROTI. Simple book tho...
I've tried the William Sonoma's recipe for chocolate brioche but it's soft and fluffy. Maybe your machine is not powerful enough.

Hi Aunty,

Since you said that, then I must give it another try. I suspected that the problem lie on my 'Tefal' oven. As my oven come with top and bottom fire with fan together. Which is too hot for baking. Another mode is bottom fire with fan, which I normally used that to bake. During the last 5mins of baking I will switch to grill, in order to brown the bread, cake, etc. Maybe this result to have a hard bread.

hi Liying,

Do not uses fan mode for baking. I personally don't like to use this mode. Just use normal temp. 175 to 180 for baking butter cakes. for buns, just bake at 190C for 10 mins only. the longer you bake, the harder and drier the buns become.

Hi Aunty,

Thanks for your replied. My oven has only three modes. Top and bottom fire with fan, fan with bottom fire and grilling. So sometimes I have difficulty in controlling the temperature and time during baking. I have to learn from trial and error in order to achieve perfect cake, muffin, especially chiffon cake, etc.
So I am still trying to master the skill to bake a perfect bread.
