Hi Aunty,

The three steamed cake which you had make this few days is it used only egg white? May I know egg white can store in the fridge for how long?

Hi Liying,

I use high heat to steam my cakes. For this bolu zebra, I used my Jumbo AMC pot with just a little water only n I used electrical hot plate at the highest heat.

Hi silverrock,

I was thinking this cake is going to flop already when I realised that the recipe calls for coconut milk and water, making the batter a little watery.

This recipe is different for the mah lai koh.

Hi Liying,

I use whole eggs not egg white. Egg white can be kept frozen in the freezer for very very long..months.

has another question for you. For the Blueberry Bun, I noticed that you had used two type of bread improvers
[Bread Softener - super tex and
Bread Improver - for crusty bread],
am I correct.

Hi Liying,

I used Bread softener to make the bread soft and Bread improver to help the bread to ferment better. Both from Sun Lik. What you mentioned are both from PH and I don't like to use those two. Doesn't work that well...

I used meringue (egg white powder) powder only for my sugar flowers. I never use it for cakes. I still prefer the fresh egg white rather than artificial egg white which has a funny after taste.
