Coffee Chocolate Brownie





Ingredients:

250 gm. Butter
250 gm. sugar
120 gm. Cream Cheese
4 eggs
70 gm. pinenuts - chopped
70 gm. pistachio - chopped
70 gm. Almond - chopped
65 gm. cocoa powder
150 gm. cake flour
1 tsp. Baking Soda
5 gm. Nescafe

Ganache: Microwave and stir till smooth

350 gm. bittersweet chocolate
250 gm. whipping cream
30 gm. butter
1 Tbsp. Corn syrup (optional)

Method:

(1) Cream Butter, sugar and cream cheese till creamy and well blended.
(2) Add in eggs one at a time making sure it's well blended before the next addition.
(3) Add in the rest of the ingredients and mix evenly. Then pour into a 9" square tray. Bake at 180C for about 45 to 60 mins.
(4) Cool cake on a cooling rack till cooled.
(5) Pour Ganache on top and then let it set before slicing.

seen your coffee chocolate brownie this morning while eating my peanut butter bread. oh no feel like throwing away my bread and have a bite of the brownies. look so delicious.

Wow!!! I'm trying to cut down on cakes and sweets because I'm training for standard chartered singapore marathon (running 10 km only lah)... but I always lose my will when I visit your blog and see all the yummy stuff! Can imagine the taste of this chocolate brownie!!!

Dear Aunty Yochana. This is first time I came across yr blog and have bake the coffee chocolate brownie. Did not put all the nuts only use walnut. I am still struggling with baking skills. My brownie turn up ok. Only why it is so dry?? I have followed recipe accordingly

Hi Maggie,

Cut down on your baking time to 410 to 45 mins. only. use a skewer to test and if it's a little sticky only , remove from the oven and leave the cake in the tin for about 15 mins before removing it. It will still continue baking in the tin and stay moist.
