I have just migrated to Melbourne from Malaysia and needless to say miss the food back home very much. I am writing to enquire if you would have a recipe for coconut filling cook with gula melaka (like this filling you use for buns and kueh dadar) but using dessicated coconut instead of fresh coconut. Understandably, grated fresh coconut is not easy to come by. Also, I am waiting for you to post your traditional Hainanese kueh recipe which I also miss very much.

Dessicated coconut will be dry and will not taste better then fresh coconut.
if you do need to cook with the d.coconut, add in some fresh milk to make it moist and fry it with some gula melaka and sugar (agak agak) to your taste. Add in some pandan leaves while frying.
