Hi Low,

Chai spice is a mixture of the indian spices and has a lovely smell. They are not heavy but light fragrant smell.

Hi jolene,

Maybe your frosting is too watery and don't hold too long in your palms, they will turn oily and watery.

For muffins, do not overstir your batter. For cupcakes, do the creaming method and it should be light and buttery.
