Almond Biscuits





Ingredients:

150 gm. Butter
80 gm. caster sugar
1/4 tsp. salt
1 egg yolk
200 gm. Plain flour
30 gm. ground almonds
1 Tbsp. Potato starch flour (can buy from NTUC)
1 Tbsp. Hoen kwe flour
50 gm. Almond Nibs
Some almond Nibs for decoration
Egg Glaze

Method:

(1) Cream butter, sugar and salt together till creamy but not oily.
(2) Add in egg yolk and mix till combined.
(3) Add in all the flour, ground almonds and almond nibs.
(4) Use a cookie cutter to cut out any shapes you desired.
(5) Egg polish the cookies and sprinkle some almond nibs on top.
(6) Bake at 175C for about 15 to 20 mins. or till golden brown.

This Almond Biscuits look really good! Thought of giving it a try for the coming CNY. May I know what Potato starch flour for? is it compulsory or i can omit/substitute it with other thing?

I found there are 2 types of Hoen Kwe flour at my hometown. It's blue and green colour packing. Which should i use?

Hi WL,

Potato starch flour helps to make the cookie more fluffy. You can substitute with hoen kwee flour.

I have potato starch flour but do not have Hoen kwe flour. Can I use 2 Tbsp potato starch flour instead? Please advise, thanks.

Oh yes you can sub with Hoen Kwe flour. Definitely no problem.

I would like to bake some of these 4 teachers' day. I hv corn fl at home but not hoon kweh or potato starch fl. Is it ok to use the corn fl instead? Pls advise me. Tk u and good day

yes you can use cornflour or rice flour.

I baked some almond biscuits and choc-chip cookies to give away to my kids' teachers and some friends and everyone says they are very good, kudos to you!
