Hi, I baked cinnamon roll too over the weekend too, but mine not so nice as yours. Do u spread the roll with milk or butter before sprinkling the cinnamon, sugar and raisin on the roll? And my bake roll is yellowish in colour. I wonder why?

Hi rita,

roll out the dough into a rectangular shape, spread butter on top of the dough, sprinkle lots of sugar and cinnamon powder. then sprinkle nuts and raisins on top and roll into a swiss roll then cut into the height which you desire. How come yours is yellow in colour? Did you add custard powder?

Hi Aunty,
This bring back memories of "Saint Cinnamon". I really missed their Cinnamon Rolls. What a pity they closed down all their outlets in Singapore.
I will try to bake Walnut Cinnamon Rolls, which you post at your Recipes site. Hope I can success. As I never bake a bread before.
Hope you can give me any advice which I should take note of. Thanks.

Hi Liying,

Cinnamon rolls are pretty easy to make. Don't have a tough dough. Make sure it's soft but not sticky.
Dust flour on the table while rolling but do not knead into the dough.

Hi Aunty,
Thanks for your replied. Need to ask you two more questions. When mixing the ingredients I should use medium or high speed?(My cake mixer is KENWOOD.) During the first and second proving do I need to cover the dough? As I read a few bakery books, they only mentioned to cover the dough during the first proving but not the second one.

Hi Liying,

speed depends on your machine, For Kenwood, use speed 1 to 2 to mix then increase speed to 4 and when it's almost done, turn to speed 6 and beat just for 1 min.
Yes you still have to cover during your second proving so that you don't have a hard and dry crust on top. Glaze with eggs before baking.
