Hi Aunty,
Where do you manage to get salted egg? I have been looking around and being told that most of the egg are wiped out by mooncake manufacturer.

Don't tell me you make then yourself also? Heehee

Hi cyndi,

It's the same row as the roti prata shop call thesevi. The egg seller's shop's name is called "Swee leong". They sell the special salted eggs for mooncakes.

Hi Aunty,
Can you share with me how do you cooked the salted egg for ping pi mooncake? I bought some and think by boiling the whole salted egg like hard boiled egg and then removed the egg yolk but realise some trace of the salted egg white still stick to it. Is this method correct?

Hi cyndi,

Oh no...you did it wrongly. You should knock the raw salted egg. Discard the egg white and use your palms to clear off the traces of egg white on the yolk like making fish balls. Coat a layer of sesame oil or chinese wine over it and then bake for 5 - 8 mins. depending on the size of the yolks.
Don't over bake the yolks as it will turn crumbly and oily.
